| Tasting Notes: | Aromatically, there are notes of toasted coconut, crème fraiche and pear torte. On the palette, this wine has luscious texture from the notable viscosity. The twenty best oak barrels were selected and blended after eight months of elevage. This wine will continue to soften during the next 20 months, then will further develop complexing chestnut and hazelnut aromas and flavors. |

| Vineyard Notes: | The Sangiacomo Vineyard, located on the Sonoma side of the cool Carneros district, is one of the most renowned Chardonnay plantings in California. Formerly grazing land and orchards, this frequently foggy area was once thought to be too cold and sunless for vineyards. The 2007 Sangiacomo Chardonnay shows lush aromas of fresh pear, and fig. The finish is refreshingly long, with flavors of lemon, crème brûlée and spice. |
| Winemaker Notes: | The 2007 vintage in Carneros is one to remember. We experienced ideal growing conditions that surmounted most of the previous 15 years. The wines from this vintage show the balance and purity we seek at Acacia, as well as increased maturity and flavor development. The consistent and cool weather allowed the slow development of flavor and aroma compounds in the grape skins. The long harvest window also provided more time to walk the vine rows and locate particular sets of grapevines with unique character. By observing the way our vines responded to the soils in which they grow, and the seasonal weather conditions, we were able to harvest select areas of our vineyards and make a collection of exceptional wines. |
