| Tasting Notes: | Grapes were harvested by hand in small bins before being pressed. The juice was transferred to French oak barrels. Fermentation was slow, taking almost seven weeks to complete. During aging, lees were carefully stirred in order to ameliorate and round out the wine’s texture and body. After 14 months in barrel, the wine was first cold stabilized, then sterile filtered and bottled. The resulting 2008 Russian River Valley Chardonnay is a complex, pleasing wine enhanced by a combination of green apple aromas and stony, mineral flavors. Further adding to the green apple character are layers of fig and tropical fruit. The wine’s acidity adds liveliness to its juicy, full texture and body. We recommend pairing this Chardonnay with bisque (or other creamy soups) and grilled fish. |
