Marsh Chardonnay
With sur lie-aged Chardonnay there is always the dilemma of what to do with the bed after the wine awakens from its sleep.
Throughout the winter and spring, the Chardonnay acquires the wonderfully rich flavors of the gradually decomposing cells that comprise its bed of settled yeast, which is called the lees (sur lie).Once the wine is removed from the barrels to prepare for bottling, the lees still contain wine with an enormous amount of flavor that would be shameful to waste.
For our
Marsh Chardonnay, we collected the wine from the lees of each barrel and blended it to create a cuvee of powerfully flavored Chardonnay. The smell of fresh bread, nutmeg and coconut is the mark of the lees and these delicious flavors marry well with the bright citrus, ginger and tropical fruit of Carneros-grown Chardonnay.
