• 1 large head cauliflower, cut into 1 inch florets
  • 1/4 cup olive oil
  • 1/4 cup white raisins, plumped in warm water and drained
  • 2 Tablespoons pine nuts
  • 2 Tablespoons capers

Preheat oven to 400 degrees F.

In a shallow baking dish, toss cauliflower with olive oil to coat.

Place baking dish in top half of preheated oven. Roast, uncovered for 30 minutes, stirring occasionally.

Add raisins, pine nuts and capers and roast an additional 10 - 15 minutes until golden brown.

Serve warm or at room temperature.

Serves 4 as a side dish
