We make 8 barrels of Rosé each year at Acacia and use the Saignée technique, which involves bleeding pink juice out of a Pinot noir fermentation tank 24-48 hours after the grapes have been transferred into the tank – while the grapes are still at a chilly 45°F. The color is released from the grape skins and changes the white juice to light pink. Stylistically, the wine is just what we hoped: beautifully transparent and vibrant pink in color with aromas of white peach, honeydew and strawberry backed by austere slate notes. The wine is refreshing with pleasing acidity and is smooth to the finish.
